Modified atmosphere packaging (MAP), also known as multiple atmosphere packaging, refers to film packages that are filled with a modified atmosphere. The first step in this process is to remove the air in the packaging, i.e. create a vacuum. The packaging is then filled with a protective gas. Possible protective gases include carbon dioxide, nitrogen, oxygen, or a mix of gases.
